Most of us on the gluten- free diet know that regular beer is not gluten free. More and more beer companies are coming up with gluten-free beer options. Angry Orchard makes a gluten-free ale that you can now get on tap at Cheeseburger In Paradise. If beer is your choice they also offer Redbridge gluten-free beer.
Science tells us that many grain alcohols are gluten free because most alcohols like Vodkas, gins and whiskeys that may be grain based are distilled. During the distillation process the gluten molecule is too large to pass through, which makes it safe for those of us that are gluten intolerant. We understand that there are those out there on the gluten-free diet that are sensitive to grain based alcohols. We sympathize with you and this blog is in no way intended to encourage you to indulge in something that makes you ill.
At C.I.P we sampled some drinks that were gluten free.  We sourced the manufacturer alcoholic beverage companies to make sure that the ingredients contained in each of the alcoholic drinks we tried were gluten free. Please understand that ingredients are subject to change at any time. *All glassware is washed and sanitized. They do rinse out containers used to mix drinks with club soda. Mixed drinks that contain regular beer are used in separate mixing containers. Anything used in a shaker tin is generally gluten free. Make sure you check with management and the bartender to validate how drinks are prepared.
 
Here are the main ingredients used in the drinks we tried;
Bacardi Torched Cherry Rum: Taste of Barbados Cherries with a light infusion of torched plant Aloe.
Blue Curacao:   C.I.P uses Le Roux brand. Blue Curacao is a sweet blue gluten-free liqueur, distilled and flavored from the dried peel of bitter oranges. It can also contain distillates of lemons, curacao fruit, sugar and wine.
 May, 2013 - We contacted Southern Wine and Spirits here in Indy, their rep told us that Coruba Rum is gluten free.
Cruzan Rum Products: Cruzan rum is gluten free, please click on the link to read more about their products. 
Margaritaville Tequila: is the brand of tequila used in their margaritas.  This tequila goes down smooth without any burn and a great taste. For more information, click on the link.
We contacted Margaritaville and received their response in April, 2013.  
They stated, "Dr Pepper Snapple Group products are free of gluten containing materials, with the exception of Mr. & Mrs. T's Horseradish Bloody Mary Mix.   For ingredient and other information about this product, please visit
www.dpsgproductfacts.com. This website lets you search for information on all of our products, and even compare nutritional information of different brands and flavors."
Midori: is a bright, green colored melon liqueur and this product is gluten free.
Monin: Flavored syrup that  C.I.P currently uses and this product is gluten free.  You may also visit: http://www.moninstore.com/FAQ.html.
Pina Colada: Contains coconut cream, pineapple juice, Sailor Jerry Spiced Rum, plus fruit juices and nectars.  These ingredients are gluten free.
Sailor Jerry Spiced Rum: Their rum is gluten free. 
Sangria: Real Sangria is the brand used in drinks using frozen sangria. Simply Naked Chardonnay is used in the Blackberry sangria.
Skyy Vodka: This is gluten free. We did receive a message from their rep to indicate that this product is gluten free when we checked in May, 2013.  
Strawberry Daiquiri:  Sailor Jerry Rum, lime juice, flavored syrup, strawberries and water. 
Sweet and Sour: C.I.P uses Finest Call brand. Sweet and Sour is a mix made of lemon or lime and syrup. 
Triple Sec:  C.I.P uses Margaritaville Triple Sec or Cointreau. Triple sec is a strong, clear orange-flavored liqueur.  It is sweet, but not cloying. This product is gluten free.
X-rated Fusion Liqueur: Fusion of French Vodka and Sicilian blood orange, mingling with mango and passion fruit.  This product is gluten free and more information may be obtained by clicking on the link.

Angry Orchard Ale on tap:
Light, crisp and slightly sweet, we all enjoyed a sample of this fruity ale. 
Redbridge Gluten-Free Beer: This gluten-free beer is offered by the bottle at C.I.P.
Blackberry Sangria: This drink was one of our fave’s. It was light and fruity and did not have a strong alcoholic taste. Made with Simply Naked Chardonnay, fresh squeezed lemon juice and blackberry then topped with Fresca.
 
C.I.P Cocktail: Made with layers of Frozen Sangria, Margaritaville Tequila Margarita, Strawberry Daiquiri, Coruba Coconut Rum Pina Colada topped with a float of blue curacao.  This drink is refreshing, sweet and tart, and one of our faves! 
Classic Margarita: Made with Margaritaville Gold Tequila and triple sec with a blend of fresh citrus juices, can be made frozen or on the rocks.  If you are looking for a strong margarita without being overpowering, you will love this drink!
Electric Lizard: Coruba Coconut Rum and Midori Melon liqueur mixed with lime juice, sweet and sour and Sprite.  For those who like a stronger drink, this would be your choice. 
Euphoria:  Frozen sangria, Margarita and Strawberry Daiquiri layers garnished with Lizard lips.  We liked this Margarita.... very tropical!
Lady of the Sea: Layers of Frozen Sangria, Pina Colada and Strawberry Daiquiri garnished with Penelope Parrot. If you prefer the taste of a sweeter drink with a smoothie vibe this is your drink. 
Pictured together below:  Pomegranate Mojito: Not listed C.I.P’s drink menu. You can still request this drink.  It is a light, refreshing with a hint of fruit drink that tastes great.  
South Beach Mojito: Cruzan Mango Rum and X-rated Fusion Liqueur shaken with orange juice, limes and mint leaves topped with club soda.  We loved this drink for it's light and citrusy taste.
World Famous Pina Colada:  C.I.P’s signature Pina Colada recipe topped with Cruzan Aged Dark Rum. If you like Pina Colada's this is an excellent choice!
Strawberry Daiquiri: Sailor Jerry Spiced Rum blended with fresh strawberries and natural lime juice garnished with Berry Beth.  The rich strawberry taste made us fall in love with this fruity drink!
Torched Cherry Pina Colada: Layers of frozen strawberry and Pina Colada topped with a Bacardi Torched Cherry Rum float.  This is a drink we would order again.  It was tart and sweet with a tropical twist!

Gluten Free Product Review & other Gluten Free Happenings

 


Udi's Rolls out New Products

 

Udi’s has some new products!! From Udi’s Whole Grain Dinner Rolls, Classic French and Crispy and delicious French Baguettes, Everything Inside Bagels, Mighty Bagels, Double Vanilla Muffins to Harvest Crunch Muffins.

I have to admit they have truly outdone themselves with their dinner rolls and their new french baguettes. These truly mimic the “real deal” in both taste and texture and will leave you stating,"Wow….I can’t believe these are gluten free!”

 
Their rolls are soft in the middle with a hard outer crust. They are sold frozen and can be warmed up in the oven. Nature’s Pharm is now carrying ALL these new products and showcasing them through a sampling from Friday Dec. 14th through Sunday Dec. 16th. Don't miss the Udi's roll and baguettes sale until the end of December!

Here’s a brief description of their latest bagel and muffin creations:

Double Vanilla Muffins: these are really good and they taste a little like angel food cake in the texture of a muffin.

Harvest Crunch Muffins: these are made with cranberries, sweet potato, quinoa flour and pepitas. Need I say more? Yum!

 Everything Inside Bagels: made with millet seeds, flax seeds, poppy seeds, onion, salt and garlic….these do remind me a little of the “Everything Bagels” that I tried in  New York years ago during my pre-gluten free era…except that these are a little milder but still packed full of flavor.

Mighty Bagels: made with cranberries, quinoa flour, sunflower seeds, pepitas, millet seeds and flax seeds…I really liked these, perfect to have around the Holidays with a little smear of cream cheese.

Camp Gluten Freedom Offers Carefree Camp Activities and Worry Free Food!

Reservations / Deposits are being accepted now for Camp Gluten Freedom July 25th - July 28th, 2013. This is an overnight camp that will be DEDICATED gluten-free.  While we are allowing campers to bring a buddy this year, ALL the food will be gluten free.  The camp is for children ages 8-14.  Don't have a child that is camp age?  That's okay, feel free to sponsor a child that may not have the opportunity to go to camp without your assistance.  You may see info listed at Gluten Free Living Now's website.  Please feel free to email tina@glutenfreelivingnow.org for additional information.

Center for Celiac Research to Join Mass General in Boston

After nearly 20 years of providing clinical care for patients and conducting breakthrough research in celiac disease and other gluten-related disorders in Baltimore, Maryland, the Center for Celiac Research (CFCR) will become part of the Massachusetts General Hospital for Children (MGHfC) in Boston, Massachusetts, on January 7, 2013. The CFCR will also be working in partnership with the Celiac Center at Beth Israel Deaconess Medical Center (BIDMC) at Harvard Medical School.  Read more HERE

Gluten Free Pad Thai

 



 Gluten Free Pad Thai 

 

Want to make a gluten free pad thai that rivals that of your favorite Thai restaurant? Here's a recipe that I tried and it was fabulous!! Interesting fact about palm sugar, it is apparently lower on the glycemic index than regular sugar.

Recipe

Ingredients:

 

 

1/2 cup of palm sugar
1/3 cup of Fish sauce (I used Thai Kitchen brand)

1/2 cup of Tamarind Soup Base Concentrate (I found this at the Asian Mart on 86th)
Thai Bird Eye Chillies (found this at Whole Foods Market/Clay Terrace) or you can use red pepper chili flakes
3 cloves of garlic finely minced
1 whole chicken breast thinly sliced
1/2 lb of shrimp de-veined
Approx 4-5 oz. of Rice Stick Noodles
2 eggs
1 cup of matchstick carrots
(I bought mine already shredded....this will save you time)
1 1/2 cups of mung bean sprouts

1 cup of asian chives
(I found these at the Asian Mart in the produce section)
cut into 1 1/2 inch segments
  
1 cup of cilantro
1 cup of coarsely chopped salted, roasted peanuts
1 lime for lime wedges
Tips:
 
If you don't like spicy, adding the chili is completely optional.

The tamarind sauce will thicken up in the fridge, heating the sauce up in the microwave for a few seconds will thin it out again.

Chopping the palm sugar cake rounds with a sharp knife works well.
 

Let's start by making our pad thai sauce. Combine fish sauce , chopped palm sugar, and tamarind concentrate in a small sauce pan. Cook sauce until the palm sugar completely dissolves, making sure you taste it. You may need to add another 1/2 cake of the palm sugar as the tamarind concentrate is really tart. To make the sauce a little spicy add some finely chopped Thai Bird Eye Chillies chopped finely...add these to taste. A little bit goes along way. After palm sugar is dissolved remove from heat and let sauce cool.


Boil noodles for about 4-5 minutes, drain immediately and rinse with cold water. Noodles should be Al dente.

Heat 3 tablespoons of oil in a wok on high (or you can use a deep frying pan), cook raw thin sliced)chicken and the cleaned shrimp for about 4-5 minutes. Remove meat from the wok and set aside in a bowl.
  
Add the rest of the oil into the pan, add garlic stirring frequently so the garlic does not burn. Add noodles and stir for about 1 minute.....you can then add 3-4 tablespoons of your tamarind sauce.
You may save left over tamarind sauce in a sealed glass jar, it will keep up to a month in the fridge. Continue to stir until noodles are well coated. Add cooked meat to the noodles and continue to stir-fry for another 2-3 minutes.
Push the noodles and meat mixture and noodles to one side of the wok and crack your egg one at a time into this space. Scramble eggs with your wooden spoon letting them cook for about 30 sec. Add carrots, washed sprouts and the asian chives.

Cook for one more minute, stir frying everything together, you may add an additional tablespoon of sauce if you feel like it needs it at this time. Garnish with cilantro, lime, some remaining chives and peanuts.....and enjoy!!
